Rhubarb is the fleshy, edible stem of Polygonum multiflorum species and hybrids that can be cooked and used as food. The whole plant – a perennial herb that grows from a short, thick rhizome – is also known as rhubarb. Historically, different plants were referred to as “rhubarb” in English.
